Chicken Salad — The Master Bowl
Chicken Salad — The Master Bowl
The record the chicken-salad family cites: #57's sandwich and #59's sliders build on this bowl. The craft is three decisions — how the chicken cooks (poached gentle, or the rotisserie's mercy), how it is cut (a mix of dice and shred, never all one), and the dressing ratio that keeps chicken salad tasting of chicken rather than of mayonnaise with cargo. Master this bowl and the family's other seats are assembly.

Chicken Salad — The Master Bowl

Prep: 15 minutes · Cook: 20 minutes · Total: 35 minutes (plus 30 minutes' chill) · 4 as a main

Ingredients

The chicken

  • 700 g (1.5 lb) boneless skinless chicken breasts, or a 1 kg rotisserie chicken, meat pulled (about 400 g cooked)
  • 1.5 liters water, 1 tbsp (12 g) salt, 1 bay leaf, 1/2 lemon, 2 sprigs thyme or parsley — the poaching court

The dressing

  • 120 g (1/2 cup) mayonnaise
  • 60 g (1/4 cup) sour cream, Greek yogurt, or buttermilk (about 62 g)
  • 1 tbsp (15 ml) lemon juice, plus more to taste
  • 1 tsp (5 g) Dijon mustard
  • 1/2 tsp (2 g) salt, plus more to taste
  • Black pepper
  • Pinch of cayenne — the hidden gear, always

The classic mix-ins

  • 2 celery stalks (about 80 g), diced small — the spine of the classic
  • 2 scallions (about 40 g), sliced thin, or 3 tbsp (12 g) chives
  • 10 g (1/3 cup) tarragon or dill, chopped — tarragon is the classic's classic
  • Optional council: 100 g red grapes, halved; 60 g toasted walnuts or pecans; 1 tart apple (about 150 g), diced

The bowl, to serve

  • 250 g (5 cups) tender greens, or bread for #57's build
  • 2 hard-boiled eggs (about 100 g), quartered — the deli case's honor
  • Extra herbs, lemon wedges

Instructions

  1. Poach gentle, to 74 °C — or pull the rotisserie. Breasts in cold salted water with the aromatics, brought over medium heat to a bare simmer (the surface barely shivering, 85 °C at the pan's floor), held 12–15 minutes until the thickest point reads 74 °C. Rest 10 minutes in the liquid off-heat, then lift and chill 20 minutes before cutting. Checkpoint — 74 °C read at the center; the flesh opaque with a faint sheen of juice on the cut. The cold-water start and the whisper simmer are why this poached breast — usually chicken salad's saddest ingredient — becomes its best.
  2. Cut the mix: half dice, half shred. Cube half the chicken in 1.5 cm pieces; shred or pull the rest by hand along the grain. The dice gives the fork something to find; the shred carries the dressing and the herbs — the two textures together read as "deli case at its best," and either alone reads as a compromise. Checkpoint — the bowl shows roughly half distinct cubes, half ragged shreds; no piece larger than two bites.
  3. Dress at 2:1, fold gently. Whisk the mayo, sour cream, lemon, Dijon, salt, pepper, and cayenne; taste — it should be tart and only mildly sweet with mustard, because the chicken is bland and this is its entire seasoning. Fold the dressing through the chicken with the celery, scallions, and herbs until everything is coated but the mixture is not packed or mashed. Checkpoint — the salad is creamy-loose: it holds a spoonful's shape for a second, then settles. A salad that stands like tuna salad has a half-cup too much dressing — the ratio is the recipe, and the 2:1 mayo-to-tang is what keeps it from caulking.
  4. Chill 30 minutes and serve or build. Thirty minutes at 4 °C lets the herbs and lemon work into the chicken. Serve over greens with the egg quarters, or hold for #57's sandwich build and #59's slider rolls. Checkpoint — eating test: the first bite tastes of chicken — juicy, herbed — with the dressing's tang behind it, celery's crunch and tarragon's anise arriving late. If the first thing you taste is mayo, the ratio slipped; add a squeeze of lemon and 15 g more sour cream at serving and rebalance the next batch.
- The poach starts cold for breasts: the meat and the water come to temperature together, and the proteins set gently instead of seizing — the difference between juicy and jerky in a cold salad. The rotisserie route skips this and the file blesses it; the poach exists for the day the store lets you down. - Mix the dressing first and chill it: it needs 15 minutes in the fridge anyway, and the bowl comes together faster than you expect once the chicken is cut.

If the first thing you taste is mayo, the ratio slipped; add a squeeze of lemon and 15 g more sour cream at serving and rebalance the next batch. Chef’s Note — the rotisserie math: a 1 kg bird yields about 400 g of mixed meat — dark and light, which this file prefers (dark meat carries flavor the breast only borrows). The skin and bones go to #110's stock while the meat chills, and the day's kitchen has paid for itself twice. A double poach (1.4 kg breasts, doubled court) feeds #57's sandwiches all week.

Doneness & Quality Checkpoints

  • Cold-start poach at a shiver to 74 °C — or rotisserie, honestly named
  • Half dice, half hand-shred
  • 2:1 dressing, tasting of lemon first, mayo last
  • One mix-in lane, committed
  • 30 minutes' chill before the bowl or the build

Finish & Plate

Over tender greens with egg quarters and herb sprigs for the bowl; on buttered toast per #57's bread law; in soft rolls per #59. A lemon wedge alongside is not decoration — chicken salad's flavors fade by day two and the wedge revives them at the plate.

Storage, Make-Ahead & Variations

- Keeps 3 days refrigerated (4 °C); day two is the peak, day three wants the lemon wedge. Do not freeze dressed chicken salad — the emulsion breaks and never recovers. - Variations: the three lanes above; the curry lane (1 tsp curry powder, mango chutney, cashews) for the department-store-tea-room register; the hot-honey-and-pickle lane; the #59 slider format and #57's full sandwich build are this bowl's downstream seats.
