Method

    Whisk citrus juice, zest, honey, shallot, garlic, cumin, salt, pepper, and jalapeño if using until the honey dissolves.

    Whisk in olive oil in a slow stream until emulsified, or combine everything in a jar and shake vigorously for 20 seconds.

  3. 03

    Taste and balance with more citrus, honey, or salt. Shake again immediately before use.

  4. 04

    Tip: Refrigerate up to 5 days. Let stand at room temperature 10 minutes if the olive oil solidifies.
