Method

    Melt butter in a saucepan over medium heat. Add onion and cook until softened, 5 minutes.

    Add beef broth, Worcestershire, soy sauce, thyme, and black pepper. Simmer 5 minutes.

    Add roast beef in batches and warm gently for 30 to 60 seconds; do not boil or the slices may toughen.

    Toast the rolls. Fill with warm beef and cheese, then broil briefly to melt the cheese.

    Strain or ladle the jus into small bowls and serve alongside for dipping.
