Method

    Marinate chicken in buttermilk, hot sauce, and salt for at least 1 hour and up to overnight.

    Mix flour, paprika, garlic powder, and black pepper. Remove chicken from buttermilk, allow excess to drip off, and coat firmly in seasoned flour.

    Fry in 350°F (175°C) oil for 6 to 8 minutes, turning as needed, until crisp and 165°F (74°C). Drain on a rack.

    Whisk 1/4 cup hot frying oil with cayenne, brown sugar, paprika, and garlic powder. Brush lightly over the fried chicken.

    Toast buns and assemble with chicken, coleslaw, and pickles.

    Tip: This sandwich is milder and more dressed than traditional bone-in Nashville hot chicken.
