Method

Heat 1 tbsp oil in a skillet and sauté the bell peppers with a pinch of salt until tender and lightly browned, 8 to 10 minutes.

In a wide saucepan, combine broth, oregano, basil, garlic powder, onion powder, pepper, and Worcestershire. Simmer 10 minutes.

Add the roast beef to the jus in batches and warm gently for 1 to 2 minutes; do not boil.

Split and lightly toast the rolls. Add provolone if using, then pile in wet beef, sautéed peppers, and giardiniera.

Spoon a little jus over the filling for a "wet" sandwich or dip the entire sandwich briefly for "dipped" style.
