Method

    Remove kale stems and tear or slice the leaves into bite-size pieces.

    Add 1 tbsp olive oil, 1 tbsp lemon juice, and salt. Massage firmly with clean hands for 2 to 3 minutes until the leaves darken and soften.

    Whisk remaining olive oil and lemon juice with maple syrup, Dijon, and pepper.

    Toss kale with apples, walnuts, goat cheese, and dressing. Serve immediately or chill up to 2 hours.
