Method

    Gently fold lobster with mayonnaise, lemon juice, celery, chives, salt, and pepper. Keep the pieces large and use only enough mayonnaise to bind.

    Spread the flat exterior sides of the split-top buns with butter.

    Griddle the buns over medium heat for 1 to 2 minutes per side until golden while the center stays soft.

    Fill the warm buns with the chilled lobster mixture. Serve immediately with lemon and drawn butter if desired.

    Tip: For a Connecticut-style roll, omit mayonnaise and warm the lobster gently in drawn butter.
