Method

  1. 01

    Cook onions in 1 tbsp butter and the oil over medium-low heat with a pinch of salt, stirring often, until deeply caramelized, 25 to 35 minutes.

    Shape beef into four thin oval patties slightly larger than the bread. Season with salt and pepper.

  3. 03

    Cook patties in a hot skillet for 3 to 4 minutes per side, until 160°F (71°C).

  4. 04

    Build sandwiches with Swiss, patties, and onions. Spread the outsides with remaining butter or mayonnaise.

  5. 05

    Grill over medium-low heat until the rye is crisp and the cheese melts, 3 to 4 minutes per side.
