Method

    Whisk peanut butter, lime juice, rice vinegar, soy sauce, sesame oil, neutral oil, honey, garlic, ginger, and chili until smooth.

    Whisk in warm water 1 tbsp at a time until the dressing is glossy and pourable.

    Taste and adjust with lime for acidity, soy sauce for salt, or honey for sweetness.

    Tip: Refrigerate up to 5 days. It will thicken when cold; thin with warm water before using.
