Method

    Heat the oven to 400°F (205°C). Wrap each beet in foil and roast 45 to 60 minutes, until a knife slides in easily. Cool, peel, and cut into wedges.

    Cut away the citrus peel and pith, then segment the fruit over a bowl to collect juice.

  3. 03

    Whisk 3 tbsp citrus juice with vinegar, honey, Dijon, salt, pepper, and olive oil.

    Toss greens lightly with vinaigrette. Arrange beets and citrus over the top; add goat cheese, pistachios, and red onion.

    Drizzle with additional vinaigrette and serve.
