Method

    Heat the oven to 400°F (205°C). Split the rolls without cutting completely through and remove a little interior crumb to create room for the filling.

    Line the rolls with provolone and toast open-faced for 3 to 4 minutes to melt the cheese and create a moisture barrier.

    Layer the ham, salami, soppressata, and pepperoni in the rolls. Sprinkle with Parmesan and return to the oven for 4 to 5 minutes, until the meats are hot at the edges.

    In a large bowl, whisk mayonnaise, red wine vinegar, pepperoncini brine, garlic, oregano, red-pepper flakes, and black pepper. Toss with lettuce, pepperoncini, and red onion.

    Season the tomato slices with salt. Add tomato and a generous mound of grinder salad to each sandwich. Close firmly and serve immediately.

    Tip: Dress the lettuce only just before assembly so it remains crisp.
