Method

    Mix mayonnaise, chipotle, and lime juice. Spread a thin layer inside each bread slice.

    Build four sandwiches with turkey, tomato, bacon, and cheese, keeping avocado aside until after griddling.

    Spread the outsides of the bread with butter or mayonnaise. Cook in a covered skillet over medium-low heat for 3 to 4 minutes per side, until the bread is golden and the cheese has melted.

    Open each sandwich carefully, add avocado slices, close, and serve immediately.
