Method

For each sandwich, beat 2 eggs with 1 tbsp milk, half the salt, and half the pepper.

Melt 1/2 tbsp butter in a 10-inch nonstick skillet over medium heat. Pour in the egg mixture and immediately place two bread slices side by side in the egg, coating one side; flip the bread so the coated sides face up.

Cook until the egg is almost set, 1 to 2 minutes, then flip the entire egg-and-bread sheet. Fold the exposed egg edges inward over the bread.

Place cheese and bacon or turkey on one bread half. Add a small amount of maple syrup or the chosen spread if desired.

Fold the unfilled bread half over the filling. Cook 1 minute per side until golden and the cheese melts. Repeat for the second sandwich.

Tip: Use moderate heat; high heat browns the egg before the bread can crisp.
